Pumpkinsoup with orange

For everybody who loves low calories, high nutritional value and delicious flavors, this delicious pumpkin soup recipe.

Ingredients

3.5 l of water
4 vegetable bouillion cubes (1 cube should be suitable for 1l soup)
1 whole hokkaido pumpkin.
150 gr potato in cubes
2 large shredded onions
3oo gr winter carrot in cubes
the juice of 1 orange, and a bit grater of the peel.
2 sweet and sour apples
A piece of ginger grated 2 thirds of an inch
3 cloves of garlic
1 tsp olive oil
1 tb cumin (do not forget too much, because cumin is predominant)
1 tsp turmeric

Preparation

1. Put 3.5 liters of water and make stock of the bouillon cubes.
2, Cut all the vegetables and the apples and fry briefly in the olive oil, together with the cumin, garlic, turmeric and ginger.
3. Put 2 third of the vegetables in the stock until it is soft and grind it with the hand blender
4. Add the rest of the vegetables so that you keep a bite and its good for the fibers.
5. Put the juice of the orange and the grater in the soup and let it boil for a while.

The soup is ready!

 

Serve tip: Put a tablespoon of cottage cheese in the soup, garnish with some coarse pepper and parsley,  coriander or basil and hang a slice of orange to the bowl.
Delicious with a spelled bread and homemade garlic butter
